Traditional and unconventional cuts are prepared to bring out the best in flavour, using mastered techniques such as house-smoking and rotisserie. Dishes are served simply with raw sea salt or marinated with exciting ingredients ranging from jalapeños to Szechuan peppercorns and coffee.
